Delicious Potatoes

This is an old family recipe. We have them every Thanksgiving. It goes good with chicken and dressing, (yes, in Texas we still make our dressing with chicken).



A great dish for family gatherings or other socials!

Delicious Potatoes

5 - 6 medium potatoes*
2 cups cheddar cheese (grated)
1 can (10 3/4 oz) cream of chicken soup
2 cups (16 oz) sour cream
1/2 cup green onions (chopped)
1/2 cup butter (melted)
Salt and pepper to taste

* I use red potatoes. You can use white potatoes, however red is the best.

Cook potatoes in boiling water with jackets on until done (do not overcook). I test mine by sticking a fork into them. They should not be mushy. When done, drain and cool until they are easy to handle. Remove jackets, and grate them using course side of grater.

Place about 3/4 of the grated potatoes in a LARGE mixing bowl. Add grated cheese, cream of chicken soup, sour cream, chopped green onions, melted butter, and salt and pepper. Mix gently until all ingredients are mixed in.

If this is too soupy, add more of the grated potatoes. This is a recipe that has to look and feel right. You will have to make it a few times to tell how much potato to include.

Place in buttered 13" X 9" casserole dish. This can either be cooked in oven at 200 degrees for 1 hour or in the microwave. I always cook mine in the microwave about 15 minutes, stiring after each 5 minute interval. The oven method seems to make them a bit dry.
